The traditional Blue Grey grows at its own pace, slowly and naturally, feeding only on grass. The Blue Grey steer is sold as beef at over 2 years of age, as compared to more modern faster growing breeds of cattle (e.g. crosses from the Limousin, Charolais or Blonde d’Aquitaine breeds of bull etc.) which are generally sold as beef at less than 2 years.
The result of slow growth in the traditional Blue Grey steer, is premium beef, which has excellent depth of flavour and succulence. This high quality beef is mostly sold through traditional butchers shops many of whom now display a window sticker to advertise the Blue Grey.
